max, the next step unfortunatly is a big bore kit
you could put a bigger back sprocket on, better acceleration, or a smaller on, higher top speed
you could try a free flowing air filter?
56 mph is good, its new rite? it should get better and faster with age also

remove the metael washer out of the exhaust and maybe purchase a front sprocket with one more tooth on it
with that maybe you will hit 80mph

sounds like it is still restricted somewhere, is the variator still restricted ?
if your after tuning parts go on http://www.scooter-attack.com next step for you is either porting his standard cylinder or buying a bigbore kit

i am not sure if you ped has the restriction on the variator,
you could either buy a preformance one, such as malossi polini or hebo, (easiest) or if you take your transmission cover off you will see two metal 'wheels' the one on the left is the variator, remove the nut with a ratchet or an airgun, be careful tho slide the 'wheel' towards you and one side should come off in your hands, then remove the 'wheel' left on the shaft now between the two 'wheels' there will be a metal shaft which allows them to move closer and further away from each other, now restricted there will be a little nylon or maybe even a metal lip restricting how close the plates can get to each other remove that and reassemble in the reverse to how you took it bits
like i said i am unsure if you ped has this restriction but it is most common on peds along with the exhaust
